Which brakes are better, the SL or the evo? I am happy with the brakes on my SL but I will soon have the option of a front end off an evo.

I would say Evo as the SL is the same as the 125 and old 250SL. The Evo is the same as Nexus, Gp800 and MP3/Fuocco but having said that Bob can stop his 500SL pretty quickly so I wouldn't say the SL is poor.
To use Evo though you need to swap the main yoke as well as the struts and discs as the Evo callipers won't fit the SL struts and Evo struts won't fit the SL yoke. The Evo struts are less prone to sagging with age and bottoming out plus you have the option to use Nexus struts which are stiffer for a sportier feel...if you can find any.
So the Evo is an upgrade, but not a massive improvement. It also means having to stock different pads where as the SL uses the same ones all round. Not sure if Evo ones cost more or not.

I have just found the right calliper has a seized piston, of course piaggio do not sell replacements so for the time being I will have to stay with the SL brakes, they work well anyway.
